Caramelised Mushrooms & Ginger Noddles


Durga Puja / Dusshera is just behind us, nothing felt the same this year, 2020 has tried and tested us in so many ways and the uncertainty continues. So, Pujas was a very sombre affair here in our city, prayers were offered but the gaiety and fun was missing and the fear lurking in everyone's mind was palpable. 
I started a small catering service during the Lockdown period and the momentum continues, we have managed to deliver smiles through our food. Had floated a Special Durga Menu and so humbled with the response, so our meals went out during all 3 days, delivering happiness through delectable Prawn Malai Curries to Kosha Mangsho to even doing Navratri Thalis. Happiness is seeing others happy. 

The easiest and tastiest asian sauce

Today cooked this simple yet flavoursome noodles for the family. All the four pillars of this house are together after many years during the festive season and that its self merits special meals. This dish doesn't demand too much time, all it takes is 30 mins and the flavours are a bomb- sweet, spicy & tangy sauce with ginger and earthy nutty taste of sesame seed oil makes it a stunner of a dish. After all the meal preps and cooking the last few days, this dish felt like a breeze. So cozy and perfect for this weather, with a slight nip in the air.

I would recommend that you use flat noodles but as I had only regular egg noodles and thats what I used. You can substitute the mushroom with boneless chicken too. I have used Oyster mushroom because that's all was available in my pantry and rest of the ingredients are just staples. Feel free to use button mushroom or any other if you like and tweak the recipe to suit your tastebuds.
