Lemon Poppy Seed Muffins
We love the flavour of citrusy tang- Assam is home to some wonderful lemons and citrus fruits. "Kaji Nemu", or citrus limon, are fragrant, long and tart limes, that form an important part of the Assamese Cuisine. I find a way of sneaking their zest and juice into cakes, desserts and ice creams too. For me, lemons are magic ingredients in my kitchen, they elevate flavours, heighten aromas and work wonders to the dishes.
These moist super easy lemon poppy seed muffins are perfect pick me ups, bursting with with fresh citrus flavour and a crunchy bite from the poppy seeds. You can make a dozen in 30 minutes and store them, isn't that a bonus during the summer? I mean, who wants to stand infront of the stove in this hot and humid days. There is something special about these sweet, slightly tang of the lemons and I of course add some zest too and then nutty taste of poppy seeds, it is criminally delicious. Sigh! The texture is spot on, it is fluffy and not too sweet and goes well with a cup of tea or coffee. These are so addictive that you will be surprised how quickly they disappear and are a hit even with those without a sweet tooth!!
