Spiced Eggpalnt Pide
Pide, is a Turkish flatbread with a variety of spicy savoury fillings from minced lamb to cheese to vegetables. I first tasted it during my trip to Istanbul about 15 years back. The street food in Turkey is fascinating and captivating, much like the country itself. I will never forget the food, we ate delectable street food, in romantic road side cafes to a fabulous meal at Ulus 29, overlooking the breathtakingly beautiful Bosphorus .
Pide is rather cute boat shaped flatbread with a delicious filling. This one has a gorgeous mix of spiced eggplant, sweet crunchy pomegranate arils, fresh mint and a yogurt dip and pistachio. The flavours and textures are incredibly fresh and mouthwatering.
It is pretty simple and almost like a pizza but there is a little difference, you skip the sauce part and go straight to the topping bit unlike a pizza, where the sauce goes onto the base and then the topping. You slather on some cool piquant mint yogurt chutney and eat it. I love Pide and I hope you enjoy making and eating this as much as I do.
