Sour Dough Crackers
My tryst with Sour Dough started some months back. I love baking breads and have been doing for many years now So, the next step was having some fun with sour dough,especially during this lockdown period. No wasteage is another pet project of mine,so everything in the kitchen finds a way to be useful. I have used the Sour dough discard to make these absolutely delicious crackers, you can binge on while watchting NetFlix in the evenings. And, if you are like who like to snack on healthy options,this one is sure to win your heart hands down. Crisp and crunchy with delighful flavours of pizza seasonings ( you one choose your own flavours, garlic and cheese or oregano or go desi and add awajain and chiili flakes, the choice is countless and trust me once you start making these, there is no stopping. it is addictive). I love these because there is no rules,while making these, shape them as you want after rolling the dough. The tip here is roll them thin and try to keep them even sized, otherwise some will cook faster than the others and thats really not easy to handle. These store well too, make a large batch and store them in an airtight container and they stay good for a couple of weeks. Serve these is a spicy salsa dip, or a creamy hummus or even with good old tomato ketchup.

Ingredients:
1cup Sour dough starter
1cup Maida
1/2cup sooji
1tsp salt
2tsp pizza seasoning
1/4cup olive oil or groundnut oil
1tsp chilli powder
1tbsp fresh mint chopped or any other herb
2 to 3tbsp water
Method:
Place all the ingredients in a bowl and mix well to form a tight dough, you may have to add a tbsp or two of water.
Cover the dough and keep aside for 30mins
Roll the dough into a big circle of about 1/5th of an inch. You need to roll it quite thin.
Cut them into either square or triangles and place them on a baking tray.
Bake at 170degree for 25mins or until crisp.
