Healthy Breakfast Muffins


Bake these batch of healthy, energy boosting breakfast muffins which is delicious to boot. During the past few months, we have all been dealing with an alien situation because of  the COVID-19 pandemic. Our moods are somber, life is compromised in every way and the only aim is to remain healthy and safe. Grateful for all that we have and be kind to everyone around us, that is the least we can do. 

Ingredients are not easily available but there is always something to be stirred up and cheer up. Somedays are trying but that is okay too. I tell myself to let go of all that I have no control of, and I remind myself that I will always have a choice on how I respond to a situation. Each one of us is given a choice that is within our power, which lies within us all.  Eat consciously, eat healthy and nourish both the body and soul with positive energy.

During our mornings, we generally have a smoothie or a bowl of overnight oats topped with fruits for flavour and sweetness. But with no fresh fruits available, these muffins came to our rescue. They are so good and so delicious that I find myself snacking into them too! Yes, I did bake a big batch. These are exceptionally filling and just right with a cup of coffee in the morning.  Besides, these are so easy to make, one bowl,  pour, mix, and dunk into the oven. Voila!!!
